I would say unless you can not get a hot frying pan and wok cooks can get in a commercial kitchen to. They have huge gas burners in large intervals.
I cooked in a wok at home and only my series of things presented to brown. More watery end of things instead of chips.
They are not as sharp as caramelization, or what they do.
